1. Start with your menu.

Write down what you plan to prepare, cook, chill and serve. Then walk through an order from storage to handover. Think about where each person will stand, how you will wash up and where customers will collect their food.

At the viewing, check the bench space, storage, serving hatch and aisle against that workflow. A layout that suits a coffee service may need different equipment for a hot-food menu.

2. Get the inclusions in writing.

Ask for an equipment list for the exact unit, including appliance makes and models, condition and what is optional. Check refrigeration, sinks, cooking equipment, water storage, waste-water arrangements and the power or gas supply each appliance needs.

The advertised Maxamus Airside fit-out includes a stainless steel interior, three sinks, grill and fryers, fridge and freezer, a cash register and bench space. Confirm these inclusions with Max and ask to see the equipment before committing.

3. Check how you will move it.

Request the external dimensions, tare weight, maximum loaded weight and coupling and braking details. Check the requirements against your intended tow vehicle with a suitably qualified adviser. Include equipment, supplies and water when discussing the working setup.

Also plan access: the route into your intended site, parking space, storage between events and room to open the hatch and doors. Ask Max about the arrangements for collecting the trailer.

4. Check the places you want to trade.

Speak to the relevant council and event or site operator before buying for a particular location. Ask what notification, permits, inspections and documents apply to your menu and proposed setup.

In NSW, the Food Authority says mobile food vendors need to notify their local council and should check requirements with every council in which they intend to operate. Requirements can differ between locations. Buying a fitted trailer does not itself establish permission to trade.

5. Compare the complete cost.

Separate the trailer purchase from the costs of setting up your operation. Ask what is included in the quoted price and allow for any transport, equipment changes, insurance, registration, site fees and approvals that apply to your plans.
